I have the day off from work today and I’m starting it off with bacon and eggs with Siracha and cheese.
I really had my heart set on a spaghetti squash this week, but they were all out at the store. This is my reaction when my mom surprised me with one when she got home.
Tonight’s amazing dinner is keto pizza! My crust was made with 1 1/2 cup shredded cheese, 1 dollop of cream cheese, 3/4 cup almond meal, and 1 egg. Melt cheese in a bowl. Let it cool and mix in other ingredients. It will become a dough like consistency. Spread out on parchment paper on a cookie sheet. Cook at 425 degrees until golden and top with your favorite toppings! Mine included oregano, turkey sausage crumbles, pepperoni, onion, and green pepper.
Starting week 3 today. I’m down to 251 (started the challenge at 256-255ish) So progress is slow going, but at least it’s going! I did go out on Saturday and had a cheat meal and drinks. Usually the cheat meal after eating keto for a few weeks helps shock my system and drop weight. However, since I drank it didn’t do much of anything. So at least I didn’t gain like I normally would when drinking. I think the water I kept chugging through out the night helped immensely. I hope I can kick it up a notch this week and make some good headway. I’d really like to hit 50 lbs by Christmas. I’m already halfway there so I think it might be possible!
You. Guys. Tonight’s dinner was SO amazing that I didn’t even get a picture of it because I was too busy stuffing my face. Here are the left overs I’m packing for lunch. I found Caveman Keto’s Lazy Keto Chicken recipe and decided to give it a whirl.
It’s a chicken breast topped with cheese, jalapeños, and bacon. I added cream cheese to mine and it was FANTASTIC. It was so easy and delicious. I’ve never been so excited to go to work and eat lunch. I also added a side of asparagus and butter. Mmmm.
